HBP #4: Earl Grey Bread with Brown Sugar Filling

As Sarawakians, we would have the annual harvest festival that is celebrated nationwide. So, I attempted to make flavored bread with brown sugar filling. Here's how...


Liquid Infusion Process

For the infused liquid, I used earl grey tea bags from Ahmad Tea. The process of infusion takes overnight so before you bake, you need to prepare this the night before. All you need is cold milk or cold water. 

I used 200ml of cold full cream milk and put a bag of earl grey in it. Cover the top of the container with cling film and leave them overnight in the fridge. You may use it the next morning or next baking day.  If you are baking with water, then replace milk with cold water. It is simple. No sweat!



Ingredients

Part A: Dough

Infused milk         180ml
Yeast         6gm
Salt         6gm
Sugar         20gm
Olive Oil        15gm

Part B: Fillings/ Flavoring

Unsalted butter (softened)        50gm
Loose earl grey tea leaves         10gm/ 1 tbsp
Brown sugar        50gm

---


Instructions

  • Lightly mix yeast with infused milk for 30 minutes. 
  • After 30 minutes, mix in all ingredients in Part A until well combined. 
  • You know your dough is ready once the flour no longer sticking to the mixing bowl. 
  • Place cling film to start Proof #1.
  • 1st Proof = 40 minutes

  • After 1st proof, remove cling film. 
  • Use your fingers, pull and stretch the dough from outside in. 
  • Repeat this for all directions, for 1-2 minutes. 
  • Place cling film to start Proof #2. 
  • 2nd Proof = 60 minutes

  • After 2nd proof, remove cling film. 
  • Remove the dough on to the baking surface. 
  • Using a dough cutter, divide the dough into two. 
  • By using a circular motion, smoothen both doughs separately.
  • Place cling film over the dough for Proof #3.
  • 3rd Proof = 15 minutes

  • While waiting, mix the brown sugar with the loose earl grey leaves. Make sure there is no clumping. 
  • Oil or place baking paper on the rectangular baking pan.

  • After 15 minutes, remove cling film.
  • Using a roller, roll one dough into a rectangular shape. 
  • Spread the softened butter onto the rolled dough. 
  • Sprinkle the brown sugar and earl grey mix on to the surface of the buttered dough.
  • Roll from the bottom up. 
  • Pinch the edges to ensure smooth surface. 
  • Place dough on to the baking pan. 
  • Repeat same process for the other dough.

  • Once the filling is done, place the cling film over the doughs on the baking pan for Proof #4 (final). 
  • 4th/ Final Proof = 60 minutes

Final Preparation

  • Brush melted butter on the surface of the dough. 
  • Cut any desired patterns on the surface of the dough.

Baking Time

  • Preheat your oven for 10-15 minutes. 
  • Bake doughs at 175C - 180C for 20-25 minutes, depending on the specification of your oven.

Moment of Truth


Have you been to a bubble tea shop or a boba shop before? My kitchen smelled like one yesterday when the sweet caramelized bread was baking in the oven. 

As earl grey tea is an acquired taste, not many people may appreciate the strong smelling tea. But my husband definitely loved it. 

I think that meant it was a success on my part.
