HBP #3: No Knead Garlic and Rosemary Foccacia

Ingredients

Part A: Dough
- Lukewarm water 200ml
- Sugar 10gm
- Salt 5gm
- Instant yeast 2.5gm
- Olive oil 20ml
- Bread/ All purpose flour 250gm

Part B: Flavoring/ Filling
- Garlic slices
- Olive oil
- Oregano leaves
- Himalayan salt

Instructions
- Mix all ingredients in PART A in a mixing bowl until all are well combined. You may find your mix to be a little wet, which is normal.
- Another option is you can active your yeast first but mixing the yeast in lukewarm water 30 minutes before you mix in all the other PART A ingredients.
- After your mix is well combined, place a cling film over your mixing bowl.
1st Proof = 20 minutes
- After 20 minutes, put a little olive oil on your hand.
- By using your oiled hand, separate and stretch your dough from outward in for all directions.
- Repeat this motion for 1-2 minutes.
- When it is completed, place a cling film over your mixing bowl.
2nd Proof = 30 minutes
- After 30 minutes, put a little olive oil on your hand.
- Repeat the same process as before by separating and stretch your dough from outside in for all directions.
- When it is completed, place a cling film over your mixing bowl.
3rd Proof = 30 minutes
- After 30 minutes, put a little olive oil in your hand and repeat the same process as before.
- When it is completed, place a cling film over your mixing bowl.
4th Proof = 30 minutes
- Oil your baking pan surface.
- Remove your dough from your mixing bowl into the oiled baking pan.
- Shape and flatten your dough to mold into the baking pan.
- When it is done, place a cling film over your mixing bowl.
5th & Last Proof = 30 minutes
- Oil your hands and gentle poke holes into the surface of your dough to remove any air bubbles that may have formed during the proofing process.
- Place sliced garlic onto the surface of the dough.
- After that, pour in a small amount of olive oil on to prevent the garlic from burning during the baking process.
- Then sprinkle rosemary or herbs leaves on the surface of the dough.
- Top the dough with sprinkles of Himalayan course salt.
Baking Process
Preheat your oven for 10-15 minutes before baking your dough at 230C for 10-15 minutes.
Baking Outcomes
Truth be told, my kitchen started to smell like some Italian kitchens. The smell of rosemary wafted throughout my small house. Smelled so delicious.
Thankfully, it was a success! My husband and parents in law love them. I hope to explore more flavors as time goes.
